There are three options to choose from: Fast, Fancy, and Fabulous. The Fast option would be best for a smoother experience.

Soft light

Soft lighting attenuates the difference in light between the blocks. There are three options for this: Off, Minimum and Maximum. For more FPS, players can turn it off completely.

Dynamic lighting

Dynamic lighting allows players to light up the world while holding a torch. It consists of three settings: Off, Fast and Fancy. Players can set it to Fast.

Shaders are custom video edits that can be activated through Optifine. However, it is advisable to keep these settings off.
